Traditional Irish Stew is commonly made with lamb or mutton, onions, potatoes and water. Nowadays, it’s also common to make it with beef.

Chuck Roast

Chuck roast is one of the most suitable cuts to cook in Instant Pot or pressure cooker. For best results, use a well-marbled chuck roast.

  • Other Common Names: Top Blade Pot Roast, Shoulder Roast, Beef Blade Roast, Braising Steak (in UK).

FAQ #1: Can I use other cuts of beef?

Beef Brisket is also a good choice for cooking this Irish beef stew. But it’ll take a longer pressure cooking time (Pressure Cook at High Pressure for around 70 minutes).

Unsalted Chicken Stock vs. Beef Stock

We’re using unsalted chicken stock instead of beef stock mainly because store-bought chicken stock usually tastes a lot better than most store-bought beef stock. But if you have homemade or high quality beef stock, use it instead of chicken stock.

FAQ: Can I skip all the sauté steps and dump everything in Instant Pot?

Yes, you can dump everything in Instant Pot, then Pressure Cook at High Pressure for 32 minutes. But if you want to beef up your stew, give it some time and labor of love.

Time-Saving Tip! Save time by preparing the ingredients while the Instant Pot is heating up and browning the chuck roast.

Brown Chuck Roast Steak

First, heat up Instant Pot by using the “Sauté More” function. Wait until the Instant Pot says “HOT”.

Amy + Jacky’s Tip! Make sure the Instant Pot is as hot as it can be to induce Maillard reaction.

Pat dry the chuck roast, season one side of the beef generously with salt and ground black pepper.

Now, drizzle 1 tbsp (15ml) olive oil in Instant Pot. Ensure the oil is coating the whole bottom of the pot.

Carefully place the seasoned side of chuck steak in Instant Pot. Generously season the other side with salt and ground black pepper.

Now, brown one side of the beef for 7 minutes before flipping over, then brown the other side for another 7 minutes.

Finally, set aside the beautifully browned chuck steaks in a large container.

FAQ #2: Why brown the chuck steak as a whole before cutting it up?

  • Retain More Moisture: Browning the whole chuck steak retains more moisture because there’s less surface area.
  • Save Time – Brown Faster & Better: Since the maillard reaction excels in a dry and high heat environment, the chuck steak will brown faster and better compared to cubed stew.
  • Richer & More Flavorful: The caramelized flavors from browning are one of the secrets to a rich & flavorful beef stew.

Make Umami Chicken Stock Mixture

While the beef is browning in Instant Pot, mix 1 tbsp (15ml) Worcestershire sauce, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) fish sauce, 1 tbsp (16g) tomato paste with ½ cup (125ml) unsalted chicken stock.

Sauté Vegetables

First, add 1 tbsp (15ml) of olive oil in Instant Pot if necessary.

Add in sliced onions and shallots, then sauté until soften (~1 min).

Add in minced garlic cloves, then stir for roughly 30 secs until fragrant.

Add in the quartered mushrooms, then sauté for another 3 mins.

Finally, season with salt and ground black pepper if desired.

Deglaze Instant Pot

Now, pour ½ cup (125ml) Guinness draught in Instant Pot, then completely deglaze the bottom of the pot by scrubbing the flavorful brown bits with wooden spoon.

Then, pour in the remaining ½ cup (125ml) Guinness draught.

Pressure Cook Vegetables

Add 1 bay leaf, 2 sprigs thyme, 1 sprig rosemary, 12g 70% dark chocolate, russet potato chunks, carrot chunks and chicken stock mixture in Instant Pot. Mix well.

Close lid, then turn Venting Knob to Sealing position.

Pressure Cooking Method: Pressure Cook at High Pressure for 4 minutes, then Quick Release.

Open the lid carefully.

Remove half of the carrot chunks & all mushrooms from Instant Pot, then set aside.

FAQ #3: Why remove half of the carrots & all mushrooms from the Instant Pot?

We purposely perfectly cooked all the vegetables, then separate them into two batches.

One batch stays in the pot to enhance flavors and acts as a natural thickener for the stew. While the other batch is removed and added back at the end to add body & mouthfeel to the gravy.

Cut Chuck Steak

While the vegetables are pressure cooking, cut the browned chuck roast into 1.5 to 2 inches thick cubes.

Place all cubed beef and the flavorful meat juice back in the large mixing bowl.

Now, add 1.5 tbsp (12g) flour in mixing bowl, then mix well with the cubed beef.

*Note: Your Instant Pot can get up to pressure with a small amount of flour.

Pressure Cook Beef Stew & Potatoes

Place cubed beef and all its meat juice in Instant Pot.

Partially submerge the beef in the liquid without stirring, because you don’t want too much flour in the liquid at this point.

Layer a stainless-steel bowl filled with halved Yukon gold potatoes on top of the beef.

Close lid, then turn Venting Knob to Sealing position.

Pressure Cooking Method: Pressure Cook at High Pressure for 32 minutes, then Natural Release for 10 minutes

After 10 minutes, release the remaining pressure by turning the Venting Knob to Venting position.

Remove the lid carefully. Then, set aside the stainless steel bowl.

Thicken Instant Pot Irish Stew and Add Vegetables

First, discard bay leaf and the herbs.

Press Sauté button. Then, breakdown the mushy russet potatoes with wooden spoon.

Now, stir to thicken the Irish beef stew.

Add sautéed mushrooms, and the previously set aside carrots in the pot.

Taste and season with salt and ground black pepper if necessary.

Make Mashed Potatoes

Amy + Jacky’s Tip! It’ll be easier if you drain and transfer the potatoes to a larger mixing bowl.

First, mash the cooked Yukon gold potatoes with a potato masher.

Then, mix in 100ml whole milk and 1 to 2 tbsp (14g – 28g) unsalted butter.

Finally, season to taste with salt & pepper.

Instructions

Partially submerge the beef in the liquid without stirring, because you don’t want too much flour in the liquid. Layer a stainless-steel bowl filled with halved Yukon gold potatoes on top. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 32 minutes, then Natural Release for 10 minutes. Open the lid. Set aside the stainless bowl.
  • Thicken Stew and Add Vegetables: Discard bay leaf and the herbs. Press Sauté button. Breakdown the mushy russet potatoes with wooden spoon. Stir to thicken the stew.
